INGREDIENTS:
Pizza
Naan Bread (can substitute with Pita)
Hummus
Balsamic Glaze
Vegan feta or cheese of choice
Cilantro
Buffalo Cauliflower
Cauliflower florets (half cauliflower head)
1/4 cup buffalo or sauce
1 tbsp Garlic Powder
1 tbsp Onion Powder
Brussels Sprouts
a handful of Brussels Sprouts, cut into fourths
Salt & Pepper to taste
1 tbsp Nutritional Yeast
1 tsp Red Pepper Flakes
1/2 tbsp Soy Sauce or Vegetarian Oyster Sauce
pinch of Brown Sugar
Instructions:
Preheat oven to 350ºF. In a bowl mix florets with seasonings and hot sauce. Add onto a parchment-lined baking sheet. Do the same with Brussels sprouts, sauce, and seasonings and add to the other half of the baking sheet. Cook in the oven until vegetables are almost roasted and fork-tender.
Toast naan bread in the oven for 5 minutes or until it has toasted a bit. Remove and top with a layer of hummus then following with cauliflower and Brussels sprouts.
Top with vegan feta, cilantro, and drizzle balsamic glaze. Serve immediately.
Tips:
To find vegan naan you can look for it at your local grocer and check the ingredients list to ensure it does not contain dairy or eggs. We typically shop for ours at Walmart or Sam's Club. There are various types but make sure to look for one that states it's vegetarian.
